Tôm lột vỏ, lấy chỉ, bỏ đầu và rửa sạch. Nấm hương ngâm nước cho nở mềm rồi rửa sạch, vắt ráo nước, xắt lát. Hành lá và gừng xắt sợi. Giá rửa sạch, để ráo. Cho 1 muỗng dầu vào chảo sâu lòng, đun nóng rồi cho gừng sợi vào phi thơm vàng, sau đó cho nấm vào xào 1 phút cho chín. Cho tiếp tôm vào đảo đến khi tôm chín tái. Thêm 1 muỗng rượu vào đảo đều đến khi tôm thấm vị, chuyển sang màu đỏ hồng.
Nước sốt: cho 1/4 muỗng đường, 1 muỗng nước vào nồi khuấy đều, sau đó thêm vào 2 muỗng nước tương, 1 muỗng hắc xì dầu, 1/2 muỗng dầu mè, 1 muỗng dầu hào, 2 muỗng rượu, tiêu, trộn đều lên. Khi tôm chín, cho mì vào chảo, trộn đều, rưới nước sốt vừa làm lên, đảo đều. Cuối cùng cho giá và hành lá vào, trộn cho mì hòa quyện vào là có thể tắt bếp. Gắp mì ra dĩa và thưởng thức ngay khi còn nóng.
